In 2016, Nino Redruello and Patxi Zumárraga revolutionized Madrid with Fismuler, a restaurant that broke with tradition and captivated diners with its honest and creative cuisine. Its success soon led them to Barcelona, where, in partnership with the Hotel REC, they brought their concept to the city, including local touches such as the cobblestone floor that evokes the old Rec Comtal.
Located near the Arc de Triomf, Fismuler Barcelona offers a bright, open space where great food meets a lively, social atmosphere.
Concept and Atmosphere
The restaurant was designed by Arquitectura Invisible and Estudio Sireé, creating a space with a raw, industrial feel: plaster and concrete walls, steel floors, filament bulbs, and wicker lamps.
The spacious interior, over 300 m², features communal tables that encourage interaction among diners, while a graffiti piece connects the interior to the street, reinforcing its urban character. In the evenings, the experience is complemented by live music, making dinner a unique gastronomic and social event.
Cuisine and Gastronomic Offerings
Fismuler’s menu is short and constantly changing, adapting to the freshest products of the day. The dishes are simple in appearance but executed with refined technique and a deep respect for the ingredients. The focus is on natural, ecological, and locally sourced products.
Some of the restaurant’s most iconic dishes include:
- San Román Escalope, a large Viennese-style escalope topped with fried egg and grated truffle, already a Barcelona classic.
- Semi-cured sea bream with almonds and grapes.
- Chicken wings with egg yolk, sweet potato, and truffle.
- Warm pod vegetable medley with velouté sauce.
- Baby squid with mushrooms and leek foam.
- Sautéed chickpeas with beef and small lobsters.
- Smoked steak tartare or confit sea bass.
For dessert, the star is the three-cheese cheesecake (fresh, cured, and blue), considered by many as one of the best in Barcelona.
Conclusion
Fismuler Barcelona has successfully brought the groundbreaking spirit of Madrid to the Catalan capital, adapting it with sensitivity to the local context. Its approach combines top-quality ingredients, refined technique, and a vibrant atmosphere, turning every visit into much more than a meal: it is a true gastronomic and social experience.
