Founded in 1982 by José María Ruiz Benito, this restaurant was born from a clear vision: to honor Castilian cuisine by elevating it into a full gastronomic experience. Located in the heart of Segovia, just steps from its majestic Plaza Mayor, José María Restaurant has masterfully combined a deep respect for tradition with a constant pursuit of excellence, earning its place as a benchmark in Spanish gastronomy.

Today, more than four decades later, it continues to be the place where locals and visitors gather to enjoy one of Segovia’s most iconic culinary experiences: roast suckling pig with Designation of Guarantee, served in an elegant setting that balances family warmth with professional hospitality.

A tradition that gave birth to its own wine

José María understood early on that a dish as emblematic as roast suckling pig needed a wine that could stand beside it. That’s why, in 1987, he founded Pago de Carraovejas, a winery in Peñafiel (Ribera del Duero, Valladolid) born with a singular mission: to complement and elevate the restaurant’s cuisine.

Every vintage from Pago de Carraovejas is crafted to strike the perfect balance between power and elegance—designed to pair with dishes rooted in tradition and depth. It’s a wine you won’t find in supermarkets, but rather one you experience at the table, glass by glass, as part of a story that began in the ovens of Segovia.

A menu where every dish finds its wine

The restaurant’s menu is a sensory journey through the heart of Castile. Its crown jewel is the roast suckling pig, cooked in a wood-fired oven, sourced from the restaurant’s own pig farm, with crisp, golden skin and tender meat so delicate it’s traditionally carved with a plate. It's paired with Pago de Carraovejas Autor, a limited-edition wine created exclusively for the restaurant—rich, complex, and full of ripe fruit and silky tannins.

The seasonal tasting menu also features dishes such as pickled partridge salad, confit cod with chickpea purée, and suckling lamb with thyme emulsion. Each course is thoughtfully paired with wines from the same group, like the vibrant, mineral Quintaluna by Ossian, or Milsetentayseis, a high-altitude red of modern precision and character.

El restaurant compta amb vuit salons amb personalitats diferenciades: des de racons íntims com La Biblioteca del Gourmet fins a espais més amplis i festius com L’Altar del Vi. La decoració combina pedra, fusta i art local, amb una il·luminació càlida que embolcalla cada trobada.
